There is some unusual gearing in that car. He was going round the Mulsanne chicanes and Mulsanne corner in 1st gear.

Amazing - wtf happened? Very nearly another origami job.
The longest homologated ratio for Le Mans Classic would be 3.07. Twisty circuit stuff usually used the stock US ratio of 3.77.
These engines, running downdraught Webers, are meant to have the pedal to the floor and will be running all day long on the straights at 5-5000rpm, which with racing tyres will give around 150 in 4th with the long diff. In 1st, 5500rpm would give 63mph with both the L and M gear sets (both had the same first gear).
Bear in mind these motors are now built to run comfortably to 7000rpm, which would give.... pure music to the soul

It wouldn't surprise me in the least if some of these cars had customer/non-standard ratios in their diffs.

Indeed, in all these non-replicas (ahem) - but no racer with half a brain would kill acceleration by any more than that, even at Le Mans. It is said that this body shape hits a brick wall at 150mph, if not before, so there's no point in gearing for more than that at 5500rpm.
